Bacon Cheeseburger Shirataki Mac and Cheese!

Bacon Cheeseburger Shirataki 
Mac and Cheese! 


This is my third time making shirataki noodles and so far this is my favorite recipe! One the reasons why I like the recipe best (at the moment) is because shirataki noodles are very chewy but when they are combined with meat it makes them seem less chewy. Another reason is because it seems like I'm eating a very guilty dish but I'm not. If you are counting calories then it will be very bad, but if you are counting carbs like I am then this is a perfect way to get a mac and cheese fix without ruining your diet.  

You will need: 
  • A small package of hamburger (thawed)
  • 5-6 slices of precooked bacon (cut into 1/2 pieces)
  • 1 bag shirataki noodles 
  • 1 small onion (finely diced) 
  • 1/2 of a red bell pepper (finely diced)
  • A cheese that melts very well (I used about 8 cheese slices because they melt well)
  • 2 tbsp sour cream 
  • 1/2 cup of very low sodium chicken broth
  • 1 tbsp butter 
  • Garlic salt 
  • Salt and pepper
Warning: Do not smell the shirataki noodles out of the bag. Even if curiosity is killing your cat do not smell them. They do not have a pleasant odor out of the bag but they taste nothing like their smell. Trust me, you do not need or want to know what they smell like.   

Prep work: 
  • Drain shirataki noodles and rinse very well with warm water in a colander
  • Squeeze out water from noodles. Put a paper towel or clean/dry dish cloth in a microwave safe bowl and add the shirataki noodles to the bowl 
  • Microwave for 2 minutes and let stand in microwave 
  • Finely dice your onion and red bell pepper 
  • Dice up your cooked bacon
  • Take your noodles out of the microwave. Pick up your paper towel or wash cloth with the noodles and squeeze the water out of them. If you are using a paper towel be careful because the paper towel will probably break and you don't want to lose your shirataki noodles in the sink. Also be careful because the noodles might still be warm.


Start cooking your hamburger over medium heat. Add a dash of salt and pepper to the raw meat and stir. When the hamburger is almost done cooking sprinkle with a little bit of garlic salt. After your hamburger is completely cooked turn the burner to low. Stir often.





While the hamburger is cooking melt butter into a sauce pan and add onion and red bell pepper. Sprinkle with a dash of salt and pepper and stir (don't use the same spoon you are using to stir the hamburger). Cook on medium-low heat until the onions are translucent. Stir often.







While your pepper and onion are sauteing you can shred or break apart cheese slices. It's up to you how much or little cheese you want to use. Choose whatever cheese you want as well but make sure that it melts well. 


When your vegetables are done cooking add half of the 1/2 a cup of chicken broth to the pan. Then add the bacon. Stir and simmer for a couple of minutes until the bacon is hot.   









Add the shirataki noodles to the pot as well as the rest of the chicken broth, most of the browned hamburger (but not all), cheese, sour cream, and a dash of salt and pepper. Stir well until the cheese is melted. Then turn to the burner to the lowest possible heat and simmer for 5-10 minutes. Shirataki noodles have no flavor so you need to let them simmer so they can absorb the flavor of the rest of the ingredients.  



Dish up some of your bacon cheeseburger mac and cheese and enjoy! I am very please with how this recipe turned out. Feel free to add more to it to make it even better. P.S. I can get almost 3 servings out of one pot.

Shirataki "Ramen"

Shirataki Ramen! 



This ramen of course is very different than regular ramen that can be bought at any grocery store, but it still tastes delicious! I'm a big fan of ramen but it's not healthy. So I had to find a way to get my ramen fix without destroying my diet. 

You will need:
  1. One bag of shirataki spaghetti noodles 
  2. One 4 oz can of mushrooms - drained (try to get low sodium or no salt added mushrooms or the sodium will be killer) 
  3. One 8 oz can of sliced water chestnuts - drained 
  4. 2.5 cups of lower sodium chicken broth
  5. 1 stalk of celery (thinly diced) 
  6. 1-2 tbsp soy sauce 
  7. Red pepper flakes (you decide how much to use) 
  8. Salt and Pepper
  9. 1 tbsp onion flakes 
  10. 1 tsp garlic flakes 
  11. 1 tbsp Lawry's salt-free 17 seasoning (Or Mrs. Dash original blend) 
  12. 1 tsp butter 



In a pot melt butter over medium heat and add celery, mushrooms, water chestnuts, (sprinkle with a dash of salt and pepper). Warm them through then add 1/2 cup of chicken broth, garlic and onion flakes, red pepper flakes (depends on how spicy you want the broth to be), and the 17 seasoning mix. Bring to  boil and reduce heat to simmer. 



Add the rest of the chicken broth and simmer for 30-40 minutes (stir occasionally). 










While the broth and vegetables are simmering you can drain the shirataki noodles. Rinse them with warm water and use your fingers to separate the noodles. Once they are rinsed use a couple of paper towels or a clean/dry wash cloth to squeeze the water out of the noodles. These noodles are strong so don't be afraid to squeeze them as hard as you can. Set them aside until the broth is done simmering. 








Bring the broth to a boil. Boil for 1 minute. 











Add the noodles to the boiling broth and stir. Boil for an additional 3 minutes. Reduce heat to low-medium and simmer for 5-10 minutes. The longer the noodles simmer the more flavor they will absorb. Taste the broth and decide if it needs more salt or pepper. 




Dish up some of your ramen and enjoy!

Shirataki Noodle Spaghetti

Shirataki Noodle Spaghetti! 


This is the first time I have ever had or used shirataki noodles, and I have to say that I'm in love with them. This recipe isn't very elaborate because I was excited to try them so I made them fast, but they turned out wonderful!



You'll Need:
  • One bag of tofu shirataki spaghetti noodles 
    • They are pretty easy to find now. I found mine by the tofu section at my local grocery store. 
  • 1/2 jar of your favorite spaghetti sauce (Or a full jar. Either way you will have leftovers for next time)
  • 1 small can of mushrooms (optional)
  • 1 tbsp butter 
  • Salt and pepper 
  • 1 tbsp dry onion flakes 
  • 1 tsp dry garlic flakes 
  • Browned hamburger (I did not add any hamburger to this recipe but I will next time. This is optional) 
  • Shredded cheese (optional) 




First thing you need to do is clean the noodles. Drain the noodles in a colander and rinse the noodles with warm water. Do not smell them! They don't have the best smell, but after cooking they only smell like yummy spaghetti sauce. 
After they are washed well you need to dry them in a towel and squeeze off all the extra water. 
Next, put them in a microwavable bowl and microwave them for one minute and thirty seconds. Let them sit in the microwave to cool down a bit because they will be hot and you will have to squeeze even more water off of them.

While they are cooling you can get the sauce ready. 


In a skillet add the 1/2 or full jar of spaghetti sauce, browned hamburger (if you want to use hamburger), onion and garlic (more if you use the whole jar), and salt and pepper.
 P.S. you can always use fresh onion and garlic as well. When I make this again that is exactly what I will do. 
Simmer the sauce until it is hot and bubbles around the edges of the pan. Stir often. 

Get out a second skillet and add butter to the pan and melt the butter. 
While the butter melts squeeze the water out of the noodles. Add them to the melted butter and sprinkle with a dash of salt and pepper. Toss the noodles in the butter and salt and pepper until they are fully coated. Then add your desired amount of sauce. 


Simmer the noodles in the sauce for about 15 minutes so they can absorb the flavor of the sauce. Have a small taste, and add more salt and pepper if needed. 

Dish up your shirataki noodle spaghetti and enjoy! I sprinkled a little shredded cheese on mine for more flavor. Enjoy! 

P.S. To those of you who have never had shirataki noodles before they are 100% different from regular noodles. They are a bit more chewy (I actually like that). However they are a wonderful for people on a diet or people who can't have gluten.
