Easy Old Fashioned Peanut Butter Cookies!

Easy Old Fashioned PB Cookies!


You're going to need: 
  • 2 and 1/2 cups of all purpose flour 
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt  
  • 1 cup brown sugar 
  • 1 cup granulated sugar
  • 1 cup of your favorite peanut butter
  • 2 sticks of butter at room temperature 
  • 2 large eggs
  • 1 and 1/2 tsp pure vanilla extract 
1. Preheat oven to 350 degrees Fahrenheit 
2. In a large bowl mix flour, baking soda & powder, salt
3. In another bowl combine brown and white sugar, peanut   butter, butter, eggs and vanilla. Beat until combined and smooth 
4. Slowly add the dry ingredients into the wet and mix well 
5. Spray a large cookie sheet with non stick cooking spray
6. Using a soup spoon or tablespoon, place dollops of cookie dough onto the pan, leaving about 2 inches of space between each cookie (you will have to bake half of the cookies then the other half afterwards or use 2 cookie sheets) 
7. Bake for 12-14 minutes or until golden brown (depending on the size, you might have to cook them for a little more or less.. watch them so they don't burn)
8. Let them cool on the baking sheet for 5 minutes then transfer to a cooling rack for 30 minutes. If you can't wait and have to have one be careful not to burn yourself!

Store in a air tight container or zip lock bag!



There are a lot of recipes out there for peanut butter cookies but this is mine. I hope you like it too. =)

Easy Breakfast Burrito!

Easy Breakfast Burrito! 
You Need: 
1. Nonstick skillet, fork, spatula  
2. 2 large eggs 
3. 2 tsp milk
4. Dash of Lawry's garlic salt
5. Dash of pepper 
6. 3 tbsp salsa (choose whatever you like) 
7. 1 tbsp of butter or margarine 
8. Shredded cheddar cheese 
9. 1 Mama Lupe's low carb tortilla  

1. Crack 2 large eggs into a cereal bowl. Add milk and dash of garlic salt and pepper. Wisk the eggs together with a fork. 

2. Add butter into nonstick skillet and turn on medium heat. Let the butter melt then add eggs into pan followed by 3 tablespoons of salsa (you can add more or less if you prefer). Mix the eggs and salsa together with a spatula. 

3. Scramble the eggs until cooked. Add desired amount of cheese onto eggs and let it melt. 

4. Put the cheesy eggs in the middle of the tortilla and wrap around the eggs. 

5. Eat and Enjoy! =)

It's never easy - the loss of a loved one.

I thought I was having a difficult time 2-3+ weeks ago with things that seem so trivial right now. On Monday, February 18, 2013 I lost my precious cousin to a horrid car accident. She and I were never close but whenever I did see her she always made me smile and laugh like she did with everyone. She had a glow about her. I wish I had gotten to see her more often and gotten to know her better. I miss her. 
I'm sharing this because I want to remind people how fragile life is and how fast it can change. I woke up Monday morning feeling great and ready to take on the world but then everything crumbled to pieces with a single phone call. Please don't forget to tell your loved ones how much you love them. Make sure you hug them and kiss them. 
Everyone, please drive safely, especially on snowy and icy roads. Don't rush. Is your life worth risking to get to work a second sooner? Stay safe. Thank-you.

Stir Fry Veggie Wrap

Stir-Fry Veggie Wrap


You'll Need: 

-Small fry pan 
-1/2 cup frozen sugar snap pea stir fry (let thaw for a few minutes before you start cooking)
-Half a small yellow or white onion 
-2 tbsp of canned mushrooms (pieces and stems)
-1 Mama Lupe's Low Carb Tortilla or a wrap/tortilla of your choice  
-2 tbsp extra virgin olive oil 
-1 tbsp Dorothy Lynch dressing 
- Salt 
-Pepper 

1. Turn heat on medium and in a small sauce pan add the extra virgin olive oil and onion. Sprinkle with a dash of salt and pepper. Cook until the onion is translucent.
 
2. Add the stir-fry veggies and mushrooms and cook until hot all the way through. 
3. Pour in 1 tbsp of Dorothy Lynch dressing and stir until combined. Turn heat to low and let the flavors combine for 3-5 minutes. 

4. Sprinkle veggies with a little salt and pepper and give a quick stir. 
5. Put veggies in the middle of the tortilla and wrap the excess around the veggies.
6. Eat! It's hot so be careful as you enjoy your meal.

My postponement was longer than I expected.

Several days ago I posted that my favorites from The Complete Life's Little Instruction Book would be postponed for a day but that postponement exceeded one day. And it still may be a another day or two before I get back on track. Life happens and I had to deal with a few things that came around. I'm sure everyone knows what I mean. Tips for reducing leg and/or body swelling!

Do You Suffer From Leg and/or Body Swelling?
Want to get rid of that all over puffiness? 

If you suffer from body and leg swelling that leaves you frustrated and in pain then please try these tips....



In Picture: 
1. Water, Water, Water! You need water to flush out the toxins in your body and water is the best way.
2. Tea! Tea is wonderful for your entire body and it helps in reducing the fluid tremendously (does for me at least). There are tons of different flavors so you can look around and see which one you like best. But note: Don't add sugar to your tea. I promise that if you drink it all the time you will come to love the bitter taste. It's worth it! You can also enjoy softer and healthier skin with a glass of tea a day.   
3. 100% Citrus Juice! Squeeze a grapefruit or orange into a glass and sip slowly. It's delicious and helps purify all the yucky stress in your body. You can also buy a bottle of orange juice if you don't feel like squeezing an actual orange but check the label and make sure it is 100% because it can't be from concentrate. 

Other:
4. Low sodium. Cut back on the salt. 
5. Move your legs! Ride a bike or walk for a few extra minutes a day to get the fluid in your legs/body moving.   
6. 100% Cranberry Juice! Make sure it is 100% and NOT from concentrate. This is very important. 
7. A healthy diet! You choose the diet that works best for you. The low carbohydrate diet is my miracle diet.

These are things I do all the time when I'm suffering from the extra fluid that's making my clothes a little bit tighter. 
Some days when I have my extra glass of water and tea and juice I see results within an hour but sometimes I don't see results until the next day or day after. 
Everyone is different so I don't know how well this will work for you. Try it and find out! I hope it works wonders for you so you don't have to suffer as much.

The Simplest But Best Pot Roast Soup Ever!

Forget Healthy!
This is simply delicious!

Simple Left Over Pot Roast Soup

You Need:
  • A Crock Pot 
  • 2 (14.5 oz) cans of Swanson beef broth
  • 1 1/2 cups frozen carrots 
  • 1 cup frozen green beans
  • 1 medium-large yellow onion
  • 2 small-medium red potatoes 
  • 12 oz of cooked pot roast
  • 2 tbsp of butter
  • 1 1/2 tsp Lawry's Salt-Free 17 Seasoning 
  • 1 tbsp salt 
  • 1 - 1 1/2 tsp pepper
1. Get your Crock Pot out and turn it on high
2. Add the two cans of beef broth and 2 tbsp of butter 
3. Add the carrots and green beans 
4. Dice the onion and potato and add to the pot
5. Add the pot roast. If you are using frozen left-overs leave it frozen  
6. Add in the seasonings and stir. Cook on high for at least 6.5 hours to 7 hours
